A suit has been filed in the US District Court in Pennsylvania on false labelling of honey. The suit appears to be based on the high levels of HMF that were found. This is an indication of excessive heating of the the honey which results in alteration of the basic components of honey. The maximum allowed HMF level in honey from temperate climates such as the US is 40 and the claim is that the Buckwheat honey sold had HMF of 119 destroying all the health properties of the honey.
